Knowing what to eat is one thing…making meals tasty is another. Too often we get into that “diet” mentality and wind up gnawing on lettuce leaves and eating plain chicken breast every day… BORING!
Use these recipes and meal ideas to add a little kick and save you from the dreaded “diet” stuff. Oh, and as always, no strange or hard to find “health food” ingredients and nothing too complicated or timely to prepare. I won’t cook that way and neither should you.

| CHICKEN AND SWEET POTATO BURRITOS (Serves 8) |
| 3 Large Sweet Potatoes |
| 2 medium to large sized Chicken |
| Breasts, trimmed of fat. |
| 1 Medium Onion, chopped |
| 1 Large Garlic clove, chopped |
| 1 Tbsp Olive Oil |
| ¼ c Cilantro, fresh if possible |
| Salt and Pepper to taste |
| 1 tsp chili powder |
| 1 tsp cumin powder |
| 8 10-inch Whole Grain tortillas |

In a medium pot boil chicken breasts until cooked through, reserve 1/3 cup broth (freeze the rest to use in future recipes that call for broth. I like to save mine in ice cube trays), set aside to cool. Once cool, pull chicken or cop into bite sized pieces.
Microwave sweet potatoes until cooked through, set aside to cool until you can handle them. Once cooled, cut open and scoop out flesh, place in food processor.

In medium skillet, over medium heat, saute onions and garlic in olive oil until softened, maybe 5 minutes. Add cilantro, salt and pepper, chili and cumin powders and a few spoons full of broth. Heat just a few minutes longer. Add this mixture to the food processor and puree until smooth.
Assemble: lay tortilla on a plate and place about 1/2c of the potato puree in the center. Next top that with about ½-3/4 cup of the chicken (depends on size of breasts). Fold sides inward and roll up, placing seam side down. 1 Burrito per serving. 8 Servings Total
Use this same concept to make Enchiladas. Just use the smallest sized tortillas you can find or use corn tortillas. Use about half the amount of filling. Roll up without turning sides in and cover with a natural enchilada or mexican style sauce. Sprinkle with 2% mexican blend cheese and bake until heated through and cheese melts. 2 enchiladas is a serving.
