Recipe of the Week
|
This is a variation of a recipe I found on www.honeysucklewhite.com. I love using ground turkey instead of beef and other high saturated fat meats. Turkey is just a wonderful lean protein and Honeysuckle White (and other companies) have wonderful variations of turkey for you to try.
This recipe is great because it is VERY high in fiber which is wonderful for good health and aids in weight loss (more than you think). It is also high in iron and magnesium and a very good source of Vitamin C due to the addition of bell peppers, in particular the red peppers.

| RED BEANS AND RICE (Serves 6) |
INGREDIENTS:

| 1 package Hot Italian Turkey Sausage (I like Honeysuckle White), cut into 1 inch pieces (use a very sharp knife) |
| 1 Tbsp Olive Oil |
| 2 16 oz cans of low sodium red beans (I rinse one can and use the other whole to further reduce sodium) |
| 4 ribs celery, sliced |
| 1 green bell pepper, chopped |
| 1 red bell pepper, chopped |
| 1 medium onion, chopped (more if you really like onion) |
| 6 cloves garlic, minced (use fresh and do not substitute powdered) |
| 2 bay leaves |
| 1 tsp ground thyme |
| 1 tsp cayenne pepper |
| ½ tsp black pepper |
| 1 tsp salt |
| 1 tsp Creole seasoning |
| Water |
| 3 cups instant or regular brown rice, prepared according to package directions (1/2c per serving) |
INSTRUCTIONS: |

Heat olive oil in a large skillet over medium heat. Cook sausage, stirring constantly until no longer pink, about 5 minutes. Add remaining ingredients, and add water if necessary to thin out mixture. Simmer for about 15 minutes, stirring occasionally. Serve over cooked rice.

Each serving has 7g fat, 296 calories, 17g protein, 43.0 carbs and only 25mg of cholesterol
