Knowing what to eat is one thing…making meals tasty is another. Too often we get into that “diet” mentality and wind up gnawing on lettuce leaves and eating plain chicken breast every day… BORING!
Use these recipes and meal ideas to add a little kick and save you from the dreaded “diet” stuff. Oh, and as always, no strange or hard to find “health food” ingredients and nothing too complicated or timely to prepare. I won’t cook that way and neither should you.

| Pear and Turkey Salad with Raspberry Vinaigrette (Serves 2) |

2 cups turkey breast |
1 pear, cored and cubed (or you could use a granny smith apple)
|
1 cup broccoli floweret's, par cook these so they are just tender, then chill
|
1/4 cup dried apricots, diced or try dried cranberries |
1/4 cup thinly sliced red onions
|
2 Tbsp. raisins
|
2 Tbsp. Almonds, plain, no salt, chopped |
4-6 cups mixed greens |
Combine first 8 items and toss to mix.
** Raspberry Vinaigrette**
Combine 2T olive oil and 2T raspberry vinegar ** and 1t honey. Mix well and salt and pepper to taste. Makes 1/4 cup.
** red wine or balsamic vinegar may be substituted.
